Savory Seeds

Note: Germination instructions are not on seed packets, follow the instructions below for starting seed.

Summer Savory:
Sow in full sunlight in early spring. Plant Summer Savory seeds 1/4 inch deep in well-drained soil, 1 inch apart in rows.
When Summer Savory plants are 2 inches tall, thin to 6 inches apart each way.

Winter Savory
In spring, sow seeds 1/8 inches deep in dry, well-drained soil. Prefers full sun and average soil. Winter savory is slower to sprout than summer savory and requires less water. Too much moisture in the soil can cause winterkill. This savory should be replaced with new plants every 2-3 years. Can be pruned to form an aromatic hedge. Cut as needed prior to flowering for culinary or medicinal use. Hang in bundles upside down in an airy place.

Savory Info

Savory is available in fresh or dried leaves. Tender leaves can be added fresh to salads or used as a garnish or bottle the herb in vinegar. Once dried and chopped, it is an integral part of herb mixtures like Herbes de Provence.

There are two types of savory - winter and summer. The two look much the same, but winter is a bit more pungent. Savory smells and tastes like Mint and Rosemary chopped together.

Savory is nicknamed the bean herb. It is typically used in soups, beans and as a meat and poultry seasoning. This herb tastes slightly warm and sharp. It is a very strong herb and should be used sparingly. P> Most commonly used as a seasoning for green vegetables, savory's special affinity is for beans. Use summer savory, with its more delicate flavor, for tender baby green beans, and winter savory to enhance a whole medley of dried beans and lentils.
